I’d Pick More Daisies

If I had my life to live over, I’d dare to make more mistakes next time.

I’d relax; I’d limber up.

I would be sillier than I have been this trip.

I would take fewer things seriously.

I would take more chances.

I would climb more mountains and swim more rivers.

I would eat more ice cream and less beans.

I would perhaps have more actual troubles, but I’d have fewer imaginary ones.

You see, I’m one of those people who lived sensibly and sanely hour after hour, day after day.

Oh, I had my moments, and if I had to do it over again, I’d have more of them.

In fact, I’d try to have nothing else. Just moments, one after the other, instead of living so many years ahead of each day.

I’ve been one of those persons who never goes anywhere without a thermometer, a hot water bottle, a raincoat, and a parachute.

If I had it to do over again, I would travel lighter than I have.

If I had my life to live over again, I would start barefoot earlier in the spring and stay that way later in the fall.

I would go to more dance; I would ride more merry-go-rounds.

I would pick more daisies.

Oven Roasted Frozen Broccoli

Greetings all!

A friend was recently telling me how tasty the frozen broccoli was when roasted in the oven. I decided to try and now this is one of my favorite quick meals. Two things to remember are:

  1. Do not thaw the broccoli
  2. Do not crowd the baking sheet

Ingredients:

  • 1/2 lb. frozen broccoli florets 
  • Tbsp olive oil 
  • 1/2 Tbsp Montreal steak seasoning - I used salt, crushed red pepper, garlic powder and dry parsley

Instructions:

  • Preheat the oven to 400ºF. Line a baking sheet with parchment paper. Spread the frozen florets out over the baking sheet (no need to thaw).
    • I also tried roasting at 450 ºF and it turned out great!
  • Drizzle the olive oil over the florets, then sprinkle the Montreal steak seasoning over top. Toss the florets in the oil and seasoning until everything is evenly distributed (it's okay if a lot of it falls onto the baking sheet, it will be stirred and redistributed again later).
  • Transfer the baking sheet to the oven and roast for 20 minutes. Take the baking sheet out and use a spatula to stir the broccoli and redistribute the oil and spices. Return the baking sheet to the oven and roast for another 10 minutes, or until the broccoli develops the amount of brownness desired. Serve hot.
    • I also squeezed some lemon to brighten the flavor.
