Roasted Chickpea Gyros

Greetings all!

Today, I come to you with another wonderful chickpea dish that is filling, tasty, and quick to make!

Ingredients

  • 15-oz can chickpeas, or if you use dry, 1 ½ cup soaked chickpeas, drained and rinsed
  • 1 tbsp olive oil
  • ¼ tsp salt
  • 1 tsp ground black pepper
  • 1 tbsp paprika (optional)
  • ½ tsp cayenne pepper (optional)
  • ¼ red onion, cut into strips
  • 2 lettuce leaves, chopped
  • 1 tomato, sliced
  • 1 cup tzatziki
  • 4 pita flatbreads, or lavash, tortillas, etc.

Instructions

  • Preheat oven to 400°F (204°C). Pat chickpeas with paper towel and toss with oil, paprika, black pepper, cayenne pepper, and salt.
  • Spread chickpeas onto a greased rimmed baking sheet and roast for about 20 minutes, until lightly browned but not hard.
  • Spread some tzatziki onto one side of the pita, then add chickpeas and veggies. Fold in half and enjoy!

Bon Appetit! Let me know how you like it!

Sing To Me, Autumn [Poem of the Week]

Sing to me, Autumn, with the rustle of your leaves.
Breathe on me your spicy scents that flow within your breeze.

Dance with me, Autumn, your waltz that bends the boughs of trees.
Now tell me all the secrets you've whispered to the seas.

Sleep with me, Autumn, beneath your starlit skies.
Let your yellow harvest moon shimmer in our eyes.

Kiss me, Autumn, with your enchanting spellbound ways
That changes all you touch into crimson golden days.

Love me, Autumn, and behold this love so true
That I'll be waiting faithfully each year to be with you.

Random: Unexpected Items through Airport Security

Greetings all!

How often do you use a microwave? If you are like me, probably several times a week! But have you ever considered bringing it on a plane with you? Apparently, you can in the United States!

Here are 9 unexpected items that TSA allegedly allows through the airport security with certain size limitations:

  1. Full-sized liquids that are frozen
  2. Fresh eggs
  3. Whole cakes and pies
  4. Live lobsters
  5. Bowling balls
  6. Pet fish in water
  7. Microwaves
  8. Snow globes
  9. Tattoo guns

Honestly I am a little dubious but intrigued as this list conjures quite a party in my mind!

What did you think? Drop me a line!
